Bad Seed Brewing's rapid growth has been remarkable - A blueprint for beginner brewers hoping to break into the Danish beer world.

                      Bad Seed Brewing is a Danish brewery started by Fredrik Hector Schmidt in 2015. Originally a contract brewery in Copenhagen, it was only three years before they were successful enough to open a new location and begin brewing on-site. A strong showing in the Copenhagen beer scene led Bad Seed Brewing to open a brewery in Gudumholm. The new location opened and began production in October of 2018.

                      Bad Seed Brewing was born out of Fredrik Schmidt's desire to drink the types of beers he enjoyed, styles that he often found difficult to find. He moved to Copenhagen and began working at Nørrebro Bryghus. After a year and a half he decided to strike out on his own. He began brewing at the Beer Collective and released his first beer, an IPA named Lazarus' Resurrection. The brewery name comes not from beer, but rather from the Australian rock group Nick Cave and the Bad Seeds—Schmidt's favorite band. Many of their beer names also takes inspiration from the world of music, beers such as Electric Hazyland  or Time of the Saison.

                      Bad Seed Brewing only has two staple beers—Lazarus' Resurrection and a coffee stout called Good Morning, Vietnam. While both beers are highly regarded, Fredrik Schmidt prefers to experiment with a  plethora of one-off brews. Sticking to primarily one-off beers means that Bad Seed can have a constantly rotating and changing lineup. This allows Bad Seed Brewing to stay on the cutting edge of the Danish beer scene.

                      Bad Seed Brewing makes an attempt to work with other Danish breweries in order to feed the thriving Danish beer scene. Cooperative, rather than competitive, brewers are able to collaborate and bounce ideas off one another—leading to better beers being brewed all around. And Fredrick Schmidt is a firm believer in the benefits of working together in order to increase the size of the pie for everyone.

                      Bad Seed Brewing's primary goal is to create easy drinking beer. Above all else, they believe drinkability is key. That isn't to say they don't aim to have a flavorful beer, just that they believe a flavorful beer that is hard to drink isn't worth making. They have managed to strike the perfect balance between flavorful and drinkable. The ability to balance these aspects allow Bad Seed to develop a unique interpretation of various styles

Bad Seed Brewing er et dansk bryggeri startet af Fredrik Hector Schmidt i 2015. Det var oprindeligt et kontraktsbryggeri i København, det var kun tre år, før de var vellykkede nok til at åbne en ny placering og begynde at brygge på stedet. Et stærkt fundament i Københavns ølscene ledte Bad Seed Brewing til at åbne et bryggeri i Gudumholm. Den nye placering åbnede og begyndte produktion i oktober 2018.



Bad Seed Brewing blev født ud af Fredrik Schmidts ønske om at drikke de slags øl, han nød, og stilarter som han ofte fandt svært at finde. Han flyttede til København og begyndte at arbejde på Nørrebro Bryghus. Efter et halvt år besluttede han sig for at slå ud på egen hånd. Han begyndte at brygge på Beer Collective og udgav sin første øl, en IPA ved navn Lazarus' Resurrection. Bryggeriets navn kommer ikke fra øl, men snarere fra den Australske rockgruppe Nick Cave and The Bad Seeds - Schmidts favoritband. Mange af deres ølnavne tager også inspiration fra musikkens verden, øl som Electric Hazyland eller Saison Time.


Bad Seed Brewing har kun to stable øl - Lazarus' Resurrection. og en kaffe stout kaldet Good Morning, Vietnam. Mens begge øl er højt anerkendte, foretrækker Fredrik Schmidt at eksperimentere med en overflod af engangsbryg. Fastholdelsen i primært engangsbryg betyder, at Bad Seed Brewing kan have et konstant roterende og skiftende lineup. Dette gør det muligt for Bad Seed Brewing at være på forkant af den danske ølscene.


Bad Seed Brewing gør et forsøg på at arbejde med andre danske bryggerier for at fodre den blomstrende danske ølscene. Samarbejdsvillige, snarere end konkurrencedygtige, bryggerierne er i stand til at samarbejde og spotte ideer af hinanden - hvilket fører til, at bedre øl bliver brygget rundt omkring. Og Fredrick Schmidt har en solid tro på fordelene ved at arbejde sammen for at øge størrelsen på kagen for alle.



Bad Seed Brewing primærte mål at skabe let at drikke øl. Frem for alt tror de at drikkebarhed er nøglen. Det er ikke at sige, at de ikke har til hensigt at have en smagfuld øl, bare at de tror en smagfuld øl, der er svært at drikke, ikke er værd at lave. De har formået at finde den perfekte balance mellem smagfuld og drikkebar. Evnen til at afbalancere disse aspekter gør det muligt for Bad Seed Brewing at udvikle en unik fortolkning af forskellige stilarter

Bad Seed Brewing's hurtige vækst fra en ide til et kontrakt bryggeri og derefter til et fuldt bryggeri på stedet har været bemærkelsesværdigt - og et blueprint for nybegyndere, der håber at bryde ind på den danske ølscene.
